Thai Stir-fried Rice
Serves: 4
INGREDIENTS
2 tsp minced ginger
1 tsp each minced garlic and chilli
2 stalks lemongrass, white bulb end only, sliced
3 spring onions, peeled and thickly sliced
6 cups cooked rice
2 kaffir lime leaves
chopped mint and coriander

METHOD
1. Heat a dash of oil in a wok or frying pan and when very hot, add ginger, garlic, chilli, lemon-grass and spring onions and cook until fragrant.
2. Add the rice and kaffir lime leaves to the pan, stir-fry quickly over a high heat until hot. Stir in the mint and coriander. Season as wished.
