Thai Chicken Pizzas With Coconut Salsa

INGREDIENTS

2 large pizza bases
2 boneless, skinless chicken breasts
3 tblsp Thai green curry paste
130 gram packet baby spinach leaves
150 grams bocconcini or mozzarella
½ cup thread coconut
¼ red onion, finely diced
2 green chillies, deseeded and chopped
1 tblsp chopped fresh coriander

Gourmet pizzas are all the rage and this Thai inspired one is quick, very tasty and easy.

METHOD

1.  Slice the chicken finely and toss with the coconut paste. Cover and allow to marinate for 15 minutes.

2.  Place the pizza rounds on a baking tray and brush the edges with oil. Cut the bocconcini cheese into thin slices and scatter equal amounts over the two pizzas. Divide the spinach between the two pizzas and top with equal amounts of chicken.

3.  Bake in a 230 degrees Celsius oven for about 8-10 minutes or until the pizza is well browned the chicken browned and the spinach wilted. Scatter with the Coconut Salsa and serve.

Coconut Salsa

1.  Toss the coconut thread with 2-3 tblsp warm water and leave for 2-3 minutes. This will help reconstitute the coconut and make it moist. Toss with the red onion, chilli and coriander.

2.  Variation: Create an Indian pizza by substituting an Indian curry paste for Thai curry paste.


COOKS TIPS

In place of sliced chicken breasts, use finely sliced beef or lamb schnitzel or, for a gourmet Seafood version, try prawns or scallops.
