Sweet And Sour Pork Chops

INGREDIENTS
440 gram can crushed pineapple, undrained
1 tblsp brown sugar
1 tblsp cornflour
2 tblsp white vinegar
1-2 green chillies, deseeded and finely chopped
1 carrot, peeled and finely sliced
2 parsnips, peeled and finely sliced
2 spring onions, trimmed and sliced
4-6 pork chop steaks or pork steaks
¼ cup chopped cashews
1 tblsp brown sugar
1 tblsp cornflour
2 tblsp white vinegar
1-2 green chillies, deseeded and finely chopped
1 carrot, peeled and finely sliced
2 parsnips, peeled and finely sliced
2 spring onions, trimmed and sliced
4-6 pork chop steaks or pork steaks
Garnish
1-2 spring onions, trimmed and finely chopped¼ cup chopped cashews
Sweet and Sour Pork is a favourite kiwi dish, so glam it up using meaty pork chops or steaks with this quick cooking, no fuss baked version.
METHOD
1. In a small saucepan combine the pineapple, brown sugar, cornflour, vinegar and chillies. Stir over a medium heat until thickened. Cool.
2. Place the carrots, parsnips and spring onion in the bottom of an oven-proof dish.
3. Place the pork on top of the prepared vegetables and pour over the sauce.
4. Bake at 200°C for 25-30 minutes or until the pork is golden and tender and the vegetables tender. Scatter over the spring onion and cashews to serve.
