Strawberry And Brandy Snap Baskets
Serves: 4
INGREDIENTS
1 punnet (250 gram) strawberries, hulled
2 tblsp orange juice or orange liqueur
2 tblsp sugar
¼ cup torn fresh basil leaves
4 brandy snap baskets
1 cup cream
grated rind one orange
2 tblsp sugar
basil leaves for garnish

A simple, delicious way with seasonal fruits.
METHOD
1. Thinly slice the strawberries and place in a shallow bowl. Sprinkle over the orange juice or orange liqueur, sugar and basil leaves and stir to mix. Cover and leave to marinate for 15 minutes.
2. Beat the cream to soft peaks and fold in the orange rind and sweeten to taste with sugar. If wished add an extra drop of orange liqueur.
3. Place a layer of the strawberries in the brandy snap baskets followed by a layer of Orange Cream. Place a final layer of strawberries on top of the cream and garnish with fresh basil leaves. Serve soon after assembly before the brandy snap baskets soften.
COOKS TIPS
