Spicy Kebabs

INGREDIENTS

500 grams diced rump steak

Marinade

½ cup non fat unsweetened yoghurt
2 tsp minced garlic
2 tblsp lemon juice
1 tblsp of flour
½ tsp each of garam masala, ground coriander, cumin and turmeric
salt, pepper and a pinch of chilli or cayenne to season

Green Masala Spiked Hummus

1 tsp each of minced garlic and ginger
2-3 large not too hot deseeded green chillies
1 cup well-packed fresh coriander with roots
250 gram tub of hummus

METHOD

1.  Marinade steak by combining unsweetened yoghurt, minced garlic, lemon juice, flour and the garam masala, ground coriander, cumin and turmeric. Season it all up with salt, pepper and a pinch of chilli or cayenne. Toss well and leave refrigerated for an hour if possible.

2.  Thread the beef onto skewers and grill under a high heat for 10-12 minutes turning regularly

3.  Serve with the Green Masala Spiked Hummus, salad and yoghurt.

Green Masala Spiked Hummus

1.  In a food processor add minced garlic and ginger, green chillies and coriander. Process until well chopped. Mix into your favourite tub of hummus.


COOKS TIPS

Don’t forget to soak the bamboo skewers in water for 30 minutes before cooking to help avoid them burning during grilling.
