Smoked Chicken And Melon Salad

INGREDIENTS

1 whole smoked chicken
½ rock melon, diced
½ honeydew melon, diced
4-6 small juicy tomatoes, quartered
½ cup basil leaves
cos lettuce

Lime, Ginger and Basil dressing

½ cup virgin olive oil
3 tblsp white wine or cider vinegar
juice and grated rind 1 lime
2 tsp minced fresh ginger
2 tblsp finely chopped basil

METHOD

1.  Pull the meat from the bones of the chicken and cut into bite-sized pieces.

2.  Dice the rock melon and honeydew melon and place in a bowl with the smoked chicken and tomatoes.

3.  Shake together the oil, vinegar, lime rind, ginger and chopped basil with a good seasoning of salt, pepper and a pinch of sugar. Toss through the salad with the basil leaves. Serve on cos lettuce-lined plates.


COOKS TIPS

For a citrus alternative, use 2 oranges and 1 ruby grapefruit in place of the melon, all peeled and segmented. You could also swap the olive oil for lemon-scented olive oil and the basil for mint.
