Real Mincemeat With Beef Mince

INGREDIENTS

250 grams lean beef mince
125 grams Shreddo (see Cooks Tip)
1 cup currants
1 cup raisins
1 apple, peeled,cored and diced or grated
¼ cup finely chopped glace ginger
2 tblsp mixed peel
2 tblsp honey
½ cup brown sugar
¾ cup ground almonds or fresh breadcrumbs
grated rind and juice 1 lemon and 1 orange
1/4 tsp grated nutmeg
¼ cup brandy

Real beef mince was replaced by beef suet in mince meat during or around the middle of the 17th century. Today we rarely even see the suet included in recipes rather we use Shreddo. More than not today butchers receive the beef animals with the suet removed. If you would like to use suet, then you will need to order it well in advance. This recipe uses traditional beef mince which, is a pleasing stuffing for a roast pork.

METHOD

1.  In a large bowl mix all the ingredients together well. I found this easiest using my hands. Seal and keep in the refrigerator before using. Use within one month.
