Quick Chow Mein

Serves: 4
INGREDIENTS
1 onion, peeled and diced
500 grams lean beef mince
¼ cup medium-grain rice
32 gram packet chicken noodle soup
2 teaspoons curry powder
227 gram can pineapple pieces, in juice or syrup
2 cups chicken stock or water
2 stalks celery, finely sliced
¼ large cabbage, finely sliced
1 cup finely sliced green beans

Friday nights are wind down nights so keep it quick, easy and simple with my Mum’s 70’s version of Chow Mien, ideal with noodles.
METHOD
1. Heat a dash of oil in a frying pan and cook the onion for about 3 minutes until it begins to soften. Add the mince and brown well.
2. Add the rice, chicken noodle soup, curry powder, pineapple pieces with juice and chicken stock or water, cover and simmer gently for 8-10 minutes or until the rice is nearly cooked.
3. Add the celery, cabbage and beans. Cover and cook for a further 5-8 minutes until the vegetables are crisp tender. Serve with fluffy rice or egg noodles for a fun family meal.
COOKS TIPS
