Prawn, Melon And Chilli Salad

Serves: 4
INGREDIENTS
300 grams shelled green prawns
½ rockmelon and watermelon peeled, deseeded
2 cos lettuces
½ large cucumber
½ cup honey roasted peanuts
¼ cup mint leaves
1 chilli, deseeded and finely diced
2 tblsp chopped fresh coriander
2 tblsp chopped fresh mint
1 tblsp sugar
4 tblsp olive oil
2 tsp fish sauce
½ rockmelon and watermelon peeled, deseeded
2 cos lettuces
½ large cucumber
½ cup honey roasted peanuts
¼ cup mint leaves
Chilli Dressing
grated rind and juice two limes1 chilli, deseeded and finely diced
2 tblsp chopped fresh coriander
2 tblsp chopped fresh mint
1 tblsp sugar
4 tblsp olive oil
2 tsp fish sauce
This refreshing salad is ideal to enliven the tastebuds.
METHOD
1. Cook the prawns in a dash of olive oil over a moderate heat, turning regularly until they turn pink. Cool.
2. Cut or ball the melons into even 2cm sized pieces. Dice the cucumber and roughly chop the mint leaves.
3. In a bowl toss together the prawns, melons, cucumber, peanuts and mint leaves with the Chilli Dressing.
4. Tear the cos lettuces into pieces or chop roughly and place on 4 serving plates. Top with the Prawn Salad and serve.
Chilli Dressing
1. Place all the ingredients in a lidded jar and shake well to combine.
COOKS TIPS
- Instead of cos lettuce, use iceberg lettuce cut into chunks.© Allyson Gofton 2008
