Pinenut, Apricot And Lemon Icecream

INGREDIENTS

1 tblsp oil
70 gram packet pinenuts, chopped
4 tblsp caster sugar
1 litre quality vanilla icecream
200 grams glace apricots, finely chopped
grated rind one large lemon

This makes a delicious mid-week icecream dessert.

METHOD

1.  Heat the oil in a pan and cook the pinenuts until beginning to become lightly golden Add the caster sugar and stir until the sugar begins to colour and caramalise. Remove from the pan and cool

2.  Place the icecream in a bowl and when just soften stir through the pinenuts, apricots and lemon rind. Place in a sealed container and refreeze. Serve when wished.


COOKS TIPS

If you do not have glace apricots, use 200 grams diced Turkish dried apricots.
