Indian Lamb Pizza With Pear And Tamarind Chutney
INGREDIENTS
250 grams lamb mince
¼ red onion, minced or finely chopped
1 tblsp freshly grated ginger
1 egg
1½-2 tblsp curry powder
2 tblsp chopped mint
200 gram tub pumpkin and kumara hummus (see Cook\'s Tips)
½ cup pizza sauce (see Cook\'s Tips)
100 grams feta cheese, crumbled
4 scallopini, sliced (optional)
150 grams fresh mozzarella, grated
few handfuls baby spinach leaves
few sprigs fresh mint
Go Indian with a pizza and chilled beer during the late summer. The pear chutney is well worth the effort as it has just the right amount of sweet and sour to complement the lamb. This is an ideal recipe for introducing your own variations.
METHOD
1. Prepare the pizza dough. While it is rising, prepare the topping.
2. Mix together the lamb mince, red onion, ginger, egg, curry powder, mint and season with salt and pepper. Mould the mixture into meatballs about the size of a small apricot.
3. Brown the meatballs quickly over a high heat in a dash of oil and set aside. Do not cook the meatballs at this stage, just brown.
4. When the dough is ready, divide in half and roll each half out to about a 23 cm round. Place on a baking paper-lined tray or a preheated pizza stone.
5. Spread the hummus evenly over the two pizzas and then dot with the pizza sauce. Scatter over the feta cheese and arrange the meatballs and sliced scallopini (if sing) on top before sprinkling with the mozzarella.
6. Fan bake at 230ºC in the middle of th oven for 8-10 minutes or until the pizza base is golden. Remove from the oven and serve with spinach and mint leaves and Pear and Tamarind Chutney (see this website for recipe).
COOKS TIPS
Pumpkin and kumara hummus is made by Lisa's and it is available from the chilled section of the supermarkets.For the Indian lamb pizza, we used spicy plum pizza sauce from the Kato range.
Variations:
Hummus - use plain hummus or spiced with roasted garlic.
Meat - use beef or chicken mince.
Tomato paste - use Indian spiced tomatoes or blend an Indian-style curry paste with the tomato paste for added flavour. Add chopped fresh coriander.
If you do not have scallopini, substitute with a sliced courgette.
