Guacomole Salsa
INGREDIENTS
2 tomatoes, finely chopped
1 red onion, peeled and finely chopped
2 avocados, stoned, peeled and chopped
1 clove garlic, crushed, peeled and mashed to a paste
1 tsp each ground cumin and coriander
2-4 tblsp chopped fresh coriander
2–3 tblsp olive oil
1 lemon (juice)
salt and pepper to season

This is always popular as a dip for a party or to accompany BBQ meats.
METHOD
1. In a bowl mix together the tomatoes, red onion, avocado, coriander, garlic, ground cumin and coriander, oil and lemon juice and season to taste with salt and pepper.
