Gingerbread
Serves: Makes 1 cake
INGREDIENTS
100 grams butter
½ cup molasses sugar
1 egg, beaten
½ cup golden syrup
½ cup milk
1½ cups flour
1 tsp mixed spice
2 tsp ground ginger
1 tsp baking soda
2 tblsp mixed peel

This Gingerbread is just perfect to use for Tropcial Trifle.
METHOD
1. Beat the butter and sugar together until well blended. Add the egg and beat well. Gradually mix in the golden syrup and milk.
2. Sift the flour, mixed spice, ginger and baking soda together and carefully fold into the butter mixture with the mixed peel. Spoon into a well-greased and paper-lined 20 cm square cake tin.
3. Bake at 180°C for 35 minutes or until the gingerbread springs back when lightly touched. Leave in the tin for 20 minutes before turning onto the cake rack to cool.
