Geranium Scented Syrup Cakes

INGREDIENTS

375 grams butter, softened
1 1/2 cups sugar
1 tsp vanilla essence
6 eggs
3 cups flour
2 tsp baking powder
scented geranium leaves
1 cup water
1/2 cup sugar
1/4 cup scented geranium leaves

METHOD

1.  Beat together the butter, sugar and vanilla essence until creamy. Beat in the eggs one at a time.

2.  Sift together the flour and baking powder and fold in to the creamed mixture.

3.  Arrange geranium leaves on the base of a greased and lined 23-25cm cake tin. Carefully place the batter on top.

4.  Bake at 160 degrees Celsius for 1 hour or until a skewer inserted comes out clean.

5.  While the cake is cooking simmer the water with the 1/2 cup sugar and sliced gernaium leaves for 10 minutes, then strain.

6.  Pierce the warm cake with a skewer and then drizzle the syrup over the cke. Allow to cool in the tin. Turn out and remove the leaves. Dust with icing sugar before serving if wished.

7.  Serve in wedges with plenty of whipped cream or yoghurt.
