Frisco Grilled Fish

INGREDIENTS

4 x 150 gram white fish fillets, skinned
1/2 cup good thick mayonnaise
grated rind one lime
1 tblsp lemon juice
2-3 gherkins, finely chopped
1 tblsp each finely copped chives and coriander or parsley
1/4 tsp minced chilli paste or ½ tsp ground chilli
1/4 cup dried breadcrumbs
1/2 cup grated cheddar cheese

Serve this fish with a nice crisp salad or your favourite green vegetables.

METHOD

1.  Place fish on a baking paper-lined tray.

2.  Combine mayonnaise, lemon juice and rind, gherkins, chives, coriander and chilli paste or powder and spread evenly over the fish fillets.

3.  Mix the cheese and breadcrumbs together and sprinkle on top.

4.  Fan grill at 180°C (or grill at 200 degrees Celsius) until the fish is tender and the cheese coating is crisp and golden.
