Coconut Bircher Muesli

INGREDIENTS

1 cup fruity porridge mix or rolled oats
1¼ cups hot water
3-4 medium-size apples, peeled and grated
¼ cup lemon juice
¼ cup condensed milk
½ cup coconut cream

Add a tropical taste to this perennial brunch favourite with coconut cream.

METHOD

1.  In a bowl, combine the oats and hot water. Stand overnight if possible or for at least 4 hours.

2.  The oats will soak up the water and it will seem to be a thick glug when you revisit it - don't panic, it's fine. Mix the apples, lemon juice, condensed milk and coconut cream into the porridge and water, and stir well. Pour this mixture into the base of a large serving bowl. Serve with dried summer fruits such as papaya, mango, toasted coconut and lime wedges. Accompany with Tropical Fruit in Lemongrass Syrup.


COOKS TIPS

Sweet-tasting Gala apples are particularly nice in this muesli. If you prefer a sharper taste, add a little unsweetened yoghurt.
