Chilled Poached Boysenberries With Marscarpone Cream

INGREDIENTS
1/2 cup water
1/2 cup sweet white dessert-style wine
1/2 cup sugar
1 vanilla pod, split (optional)
3 punnets boysenberries hulled (or 500 grams frozen)
1 cup cream, lightly whipped

Marscarpone Cream
1 cup mascarpone1 cup cream, lightly whipped
METHOD
1. Put the water, wine, sugar and vanilla pod into a saucepan and simmer together for about 3 minutes, stirring until the sugar has dissolved.
2. Bring to the boil and add the boysenberries. Turn off the heat and set aside. When cool transfer to a large glass dish and remove the vanilla pod. Serve with the Mascarpone Cream.
Marscapone Cream
1. Fold the mascarpone into the whipped cream; sweeten if wished.
COOKS TIPS
