Brunch Wraps
Serves: 6
INGREDIENTS
1 1/2 cups water
325 gram bottle pancake mix
1/2 cup plain yoghurt
12 rashers streaky bacon
6 bananas
icing sugar
whipped cream (optional)

We used Hansell's pancake mix for this recipe.
METHOD
1. Pour the water into the bottle of pancake mix, add yoghurt and shake vigorously until smooth.
2. Heat a knob of butter in a non-stick pan when hot pour in 3-4 tablespoons of the mix into the pan and tilt to coat the base of the pan evenly. Cook until bubbles appear and the edges begin to golden. Flip over and cook the second side for about 1 minute. Keep warm while you cook up all the pancake mixture.
3. Grill or panfry the bacon and bananas then wrap in the pancakes.
4. Serve drizzled with maple syrup, a dusting of icing sugar and a dollop of whipped cream.
