Brunch Pizzas
Serves: Serves 4
INGREDIENTS
4 Lebanese breads (or use large pita rounds)
1/2 cup tandoori paste or tomato paste
200 grams black pudding, sliced
150-200 grams gruyere cheese, sliced (try gruyere with cumin seeds)
4 rashers streaky bacon, trimmed and sliced
4 eggs
freshly ground black pepper

This variation on a pizza theme makes a tasty start to a late morning!
METHOD
1. Spread the Lebanese breads with equal quantities of either the tandoori paste of tomato puree.
2. Arrange the black pudding slices around the outside of each round and then twist the bacon rashers over the black pudding. Scatter slices of cheese evenly on top
3. Crack the eggs into the centre of each round and season the pizzas with freshly ground black pepper.
4. Bake at 220°C for 12-15 minutes until the egg is cooked and the pizza golden and crispy.
