Breakfast Pizza With Black Pudding

INGREDIENTS

1 quantity basic pizza dough
½ cup pizza tomato sauce
200 grams black pudding, finely sliced
2 rashers bacon, sliced
handful of cherry tomatoes, halved
4 eggs
½ cup finely grated parmesan cheese
½ cup grated mozzarella
basil leaves

Having friends over for brunch? Impress them with breakfast foods on top of pizza dough. If black pudding doesn't appeal, try ham or smoked chicken and add sliced tomatoes. Vary the flavours with different cheeses.

METHOD

1.  Prepare the pizza dough. While it is rising, prepare the topping.

2.  Divide the pizza dough into four. Roll each out to a 15-18cm round and place on a baking paper-lined tray or preheated pizza stones. Press the dough out more thinly in the centre as this is where the egg sits.

3.  Spread each pizza with a quarter of the tomato sauce. Cut the black pudding slices in half and arrange around the edge. Scatter over the bacon and halved tomatoes.

4.  Crack the eggs and place one in the centre of each pizza. Scatter the two cheeses evenly over the pizza, especially over the yolk of the eggs.

5.  Fan bake in the middle of the oven at 200ºC for 8-10 minutes until the egg is just set. Garnish with fresh basil leaves and serve hot or cold.
