Black Bean Calamari Stir Fry
Serves: 4
INGREDIENTS
340 grams Sealord Simply Natural Calamari Rings, defrosted
1 tblsp sesame oil
2 tsp minced ginger
2 red peppers, finely sliced
6 baby fennel bulbs, finely sliced
1 tsp minced garlic
2-3 spring onions, sliced diagonally
1 tblsp dark soy sauce
1 tblsp dry sherry or mirin
1 tblsp black bean sauce
1 tblsp water
1 tblsp sugar
1 tblsp sesame oil
2 tsp minced ginger
2 red peppers, finely sliced
6 baby fennel bulbs, finely sliced
1 tsp minced garlic
2-3 spring onions, sliced diagonally
1 tblsp dark soy sauce
1 tblsp dry sherry or mirin
1 tblsp black bean sauce
1 tblsp water
1 tblsp sugar
METHOD
1. Pat the calamari rings dry on absorbent paper. Mix together the sesame oil and ginger, toss through the calamari and leave to marinate while cooking the vegetables.
2. Heat a dash of oil in a non-stick pan and stir fry the red peppers and fennel for 2-3 minutes. Add the garlic and spring onions and toss quickly until fragrant. Set aside.
3. Stir fry the calamari in batches for 2-3 minutes until just tender. Add the remaining ingredients, return calamari and vegetables to the pan and toss well.
4. Serve immediately on udon noodles, garnished with cashew nuts.
