Black And White Amaretti Biscuits
INGREDIENTS
1 packet amaretti biscuits
75 grams white chocolate
Look for these on the biscuit shelf in the supermarket.
METHOD
1. Melt dark chocolate by placing in small dish over simmering water or in microwave on low for 1 minute.
2. Dip almost half the biscuit in dark chocolate. Set aside so chocolate can become hard (a cake cooling rack is good to use for this). Repeat using all the biscuits.
3. Melt white chocolate as above. Dip the other side of each biscuit in white chocolate (leaving a narrow strip of biscuit showing between dark and white chocolate). Set aside. Use any left over chocolate to pipe decoratively on top. Store in an airtight container
Time Plan
1. Prepare the apricots and set aside
2. Prepare and cook the chicken casserole. If wished cook it in a slower oven (160°C) for about 45 minutes and it you may find it will be ready just as your guests sit down to eat.
3. Chocolate-coat the amaretti biscuits and leave on the cake rack until required.
4. Have all the ingredients for the polenta out and prepare just before serving.
