Bacon And Mushroom Pate
Serves: Makes 1½ cups
INGREDIENTS
4 rashers rindless bacon, finely chopped
250 gourmet brown mushrooms, sliced
250 cream cheese
pepper to season

It's hard to beat a tasty home made pate with pre-dinner or cocktail party drinks and this one's easy to make.
METHOD
1. Cook the bacon in a non-stick frying pan until the fat runs and the bacon becomes crisp. Transfer to a plate.
2. Add the mushrooms to the pan and cook over a moderate heat for 5 minutes or until the mushrooms have softened.
3. Put the mushrooms, bacon and cream cheese into a food processor and process until smooth. Season with pepper. Pile into small pots to serve. Refrigerate for 30 minutes before serving with crackers or crostini. If wished, garnish with a little diced cooked bacon and sliced mushroom.
