Bacon And Cranberry Salad
Serves: 4
INGREDIENTS
12 rashers bacon
1 cup Craisins
3 avocados, peeled , stoned and sliced
2 cups baby spinach leaves
2 pink grapefruit, segmented
1/2 cup vinaigrette
2 tblsp chopped fresh basil
2 limes grated rind and juice
1 tsp salt

Dressing
1/4 cup Cranberry Jelly1/2 cup vinaigrette
2 tblsp chopped fresh basil
Lime Pickled Onions
1 red onion, finely sliced2 limes grated rind and juice
1 tsp salt
A deliciously different salad with an Italian touch.
METHOD
1. Wrap the bacon rashers up in a tight roll and secure with a toothpick. Cook in a dash of oil in a frying pan until crispy. Set aside.
2. In a bowl toss together the bacon, cranberries and grapefruit slices in the dressing.
3. Serve the salad on top of garlic butter-grilled bruschetta slices garnished with pickled onions.
Dressing
1. Mix all ingredients together.
Lime Pickled Onions
1. Toss all ingredients together and stand 30 minutes. Drain.
