Avocado with smoked chicken and brie muffins
INGREDIENTS
3 cups flour
2 tblsp baking powder
½ tsp salt
1 tsp dried mustard
125 grams Brie cheese, diced
½ smoked chicken breast, diced
1 avocado, stoned, peeled and diced
1 cup grated cheddar cheese
2 eggs
1¾ cups milk
100 grams butter, melted and cooled

METHOD
1. Sift the flour, baking powder, salt and mustard into a bowl. Toss though the half the Brie and all the smoked chicken, avocado and grated cheddar cheese and make a well in the centre.
2. In a jug blend together the eggs and milk and blend into the dry ingredients with the melted butter.
3. Divide the mixture evenly between 12 well-greased muffin tins and top each with a piece of remaining Brie.
4. Bake at 220ºC for 18-20 minutes until well-risen and golden. Cool in the tins for 5 minutes before enjoying.
