Apricot Almond Bars
Serves: Makes 24 bars
INGREDIENTS
70 gram packet ground almonds
2 cups icing sugar
250 gram packet wine biscuits, roughly crushed
70 gram packet almonds, toasted
1 cup chopped plump dried apricots
2 tblsp brandy or orange juice
75 grams butter, melted
1/2 cup sweetened condensed milk
a few drops almond essence
200 grams white chocolate
4 tblsp cream
1/2 cup icing sugar, sifted
2 cups icing sugar
250 gram packet wine biscuits, roughly crushed
70 gram packet almonds, toasted
1 cup chopped plump dried apricots
2 tblsp brandy or orange juice
75 grams butter, melted
1/2 cup sweetened condensed milk
a few drops almond essence
200 grams white chocolate
4 tblsp cream
1/2 cup icing sugar, sifted
Delicious and tempting...you may need to lock the fridge!
METHOD
1. In a bowl blend together the ground almonds, icing sugar, biscuits, toasted almonds, apricots brandy or orange juice, butter, condensed milk and almond essence. Spread into the base of a greased and lined 20cm x 30cm slice tin.
Icing
1. Melt the white chocolate and cream over a bowl of hot water or in the microwave, then stir in the icing sugar. Spread on top of the almond layer and refrigerate until firm. Cut into bars to serve. Allow to stand at room temperature for about 20 minutes before serving.
2. Keep refrigerated in a lidded container
