Annato Vinaigrette

INGREDIENTS

1/2 cup olive oil (use good quality olive oil here)
1/4 tsp annatto
1 tsp minced fresh garlic
1/4 tsp salt
pinch chilli powder
2 tblsp lime juice
2 tblsp vinegar (try balsamic, red wine or sherry)
salt and pepper to season

Annato is a traditional spice from Mexico, available in specialty and Asian food shops...and it will give you bright yellow vinaigrette for something different.

METHOD

1.  Heat the oil, annatto and garlic until warm and fragrant. Set aside to cool.

2.  Stir in the salt, chilli powder, lime juice and vinegar. Season with salt and pepper.
