METHOD

Fruit Sinking to the bottom of the cake

1.  Fruit too moist or damp. There is no need to wash dried fruit today Often glace cherries sink, as they are too sticky. Dust with a little of the measured flour before folding into the cake mixture The cake mixture is too soft to support the weight of the fruit If the cake mix has too much raising agent in it, often it cannot hold the weight of the fruit, so it will sink

Dry Cake

1.  Overcooked Not a moist enough mixture Too much raising agent For fruit cakes they can have been cooked too hot, the cake mix is not moist enough and is too stiff or the cake has not had enough protection when cooking and has overcooked and dried out.
