
Apricot Chicken Salad
Serves: 4
Ingredients
1 smoked chicken
6 apricots, stoned and thickly sliced
200 grams blanched beans or snowpeas
4 spring onions, finely sliced
salad leaves for 4
1 tblsp curry powder or paste
1/2 cup mayonnaise
1/4 cup sour cream or whipped cream (optional)

Dressing
1/4 cup apricot jam1 tblsp curry powder or paste
1/2 cup mayonnaise
1/4 cup sour cream or whipped cream (optional)
Smoked chicken dressed up for a rosette-winning lunch.
Method
1. Pull the meat from the smoked chicken and cut into large chunks.
2. Place in a bowl with the apricots, snow peas, spring onions and salad leaves and toss to mix.
3. Serve in deep plates and bowl garnished with a spoonful of the Creamy Apricot Mayonnaise.
Creamy Apricot Mayonnaise
1. Combine all ingredients.
