Fennel Salad
Ingredients
A quick and easy way to inject interest into a supermarket-bought packet of green salad is to add well-washed and sliced baby fennel bulbs and garnish with petals from fresh calendula or nasturtium flowers. See the following recipe for a delicious dressing.

1. Blend equal quantities of olive oil, clover or Tawari honey and cider vinegar, then season with a small spoonful each of wholeseed mustard and prepared mustard such as Dijon. Finish with a pinch of salt and pepper. Shake well.
