Cheese And Onion Shortbread

Ingredients

100 grams flour
100 grams butter, grated
1 cup cheese, grated
32 gram packet onion soup mix (optional)
1 egg yolk
Makes a wonderful companion to soups.



Method

1.  Put the flour, butter, cheese and soup mix in a bowl. Using your fingertips, rub ingredients together until they form a stiff biscuit mixture. Work in the egg yolk. Alternatively, process in a food processor and add the egg yolk when the mixture begins to form a stiff mix.

2.  Turn mixture out on a lightly floured board, knead lightly. Use flour sparingly to dust the board and rolling pin. Roll mixture out to about 3mm thick, cut into shapes and place on a baking, paper-lined tray. Brush with egg glaze (beat an egg with a pinch of salt added until smooth) if wished.

3.  Bake at 180ºC for 12-15 minutes until crisp.
