Easy Almond Croissants

Ingredients

2 cups whole milk
1 tsp vanilla essence
1 tsp almond essence (optional)
4 egg yolks
1/2 cup caster sugar
1/2 cup flour
2 cups (about 3 x 70 gram packets) ground almonds
10 croissants
Take croissants a further step than cheese and ham and make this delicious almond custard to fill the centre of pre-bought croissant. Serve war and they are delicious with our Peach Cocktail.



Method

1.  Bring the milk and essence to scalding point in a saucepan.

2.  Beat the egg yolks, sugar and flour together to make a thick paste. Gradually pour the hot milk onto the egg mixture. Return the mixture to the saucepan and stir over a low heat until the mixture becomes quite thick. Boil for 2 minutes stirring all the time. Add the ground almonds and set aside to cool.

3.  Cut a split the thickest part of the croissants and fill with an even amount of almond paste. Place on an oven-proof tray and heat at 180 degrees Celsius for about 6-8 minutes until warm. If wished, dust with icing sugar to serve.
