
Crumpets
Ingredients
1 tsp salt
2 tsp dried yeast
3-4 cup warm milk
1 cup warm water
1/4 tsp baking soda
1/4 cup cold water
1 egg white
Serve these Crumpets toasted with lashings of butter and jam.
Method
1. Sift the flour and salt together and make a well in the centre.
2. Stir the yeast into the warm milk and water and allow to stand for 10 minutes until frothy. Beat into the flour and then continue beating for five minutes.
3. Cover and stand in a warm place for 30-40 minutes. By this time the mixture will have risen and begun to collapse. Dissolve the baking soda in 1/4 cup water and beat into the batter.
4. Lightly beat the egg white and fold into the batter. The mixture should be unevenly sloppy.
5. Pour serving spoon-size amounts into a hot well-buttered frying pan and cook over a moderate heat until there are many bubbles on the surface and it has begun to dry. Transfer to a cake rack to cool while you cook the remaining mixture. (These can also be cooked in well-greased crumpet or egg rings.)
